Spain

From tapas to bocadillos, Spain offers an exquisite range of foods to please all palettes. My personal favorite was the paella by the seaside. I also really enjoyed the history of establishments like Chocolatería San Ginés that have been around for centuries.

Additionally, the Islamic influence across Spain was breathtaking. As we drove through Cordoba, Granada, and Sevilla, I encountered Islam’s impact in the region’s architecture, culture, and especially its gastronomy. On this trip, I learned how the Moors transformed Spanish cuisine by introducing new spices, crops, and agricultural practices, many of which continue to shape it today.
